RECIPE OF THE WEEK: COUSCOUS WITH ASPARAGUS, COURGETTE AND CHICKEN

Delightfully healthy, Morning Beauty’s recipe of the week is an easy couscous prepared with asparagus, courgette, feta and grilled chicken. Chicken is rich in phosphorus and selenium, and is the source of low fat protein as well. Feta contains high levels of calcium and vitamins B-6 and B-12; whereas couscous provides plenty of energy but it has fewer calories than rice or quinoa (100g provides 112 calories and over 4g of protein). Lastly the asparagus, which is packed with fibres and vitamins A, C E and K, and the courgette that is a very low calorie vegetable and enriched with antioxidants and potassium.
INGREDIENTS (serves 2)
2 tbsp olive oil
1 garlic clove, crushed
½ courgette, finely sliced
1 red chilli, finely chopped
30g cherry tomatoes
30g feta, roughly chopped
1 tbsp fresh parsley, chopped
390g chicken breasts, roughly chopped
Salt and black pepper
1. Grill the chicken breasts. In another saucepan, cook the asparagus. Set aside.
2. Place the couscous in a large bowl and pour on 300ml boiling water. Cover with cling film and set aside for 5 minutes.
3. Heat the olive oil in a large frying pan and cook the courgette, garlic and chilli for about 5 minutes.
4. Sift the couscous and add the warm vegetables, asparagus and chicken. Toss well and add parsley, salt and black pepper. Serve it immediately.
